  • 1 lb (450g) ground beef (80/20 works best for flavor)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup (60ml) beef broth or water
  • 1 large bag (1316 oz / 370-450g) restaurant-style tortilla chips (preferably Tostitos Scoops)
  • 3 cups (340g) shredded Mexican blend cheese (or a mix of sharp cheddar and Monterey Jack)
  • 1 cup (240ml) sour cream
  • 1 cup (240g) fresh pico de gallo or salsa
  • 1 cup (150g) diced tomatoes
  • 1 avocado, diced and tossed with lime juice
  • ½ cup (80g) sliced black olives
  • ¼ cup (30g) sliced jalapeños (pickled or fresh)
  • ¼ cup (15g) fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1 can (15 oz / 425g) black beans, drained and rinsed (optional)
  • ½ cup (75g) corn kernels (fresh, frozen, or canned) (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with aluminum foil or parchment paper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until it starts to soften.
  3. Add the ground beef and break it apart with your spoon. Cook for 5-6 minutes until browned, stirring occasionally. Leave about a tablespoon of fat in the pan for flavor.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Reduce the heat to medium. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir and cook for 1 minute until the spices are toasted.
  6. Pour in the beef broth and let it simmer for 2-3 minutes until most of the liquid has evaporated. The beef should be moist but not soupy. Taste and adjust seasoning.
  7. Spread half the tortilla chips in an even layer on your prepared baking sheet. If using black beans or corn, scatter them over the chips now.
  8. Spoon half the seasoned ground beef evenly over the chips. Sprinkle half the shredded cheese over the beef.
  9. Add the remaining chips on top, arranging them to cover any gaps from the first layer. Spoon the rest of the ground beef over the top, then finish with the remaining cheese.
  10. Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is fully melted and starting to bubble around the edges.
  11. While the nachos are baking, arrange your toppings in small bowls: sour cream, pico de gallo, diced tomatoes, diced avocado, black olives, jalapeños, cilantro, and green onions.
  12. Remove the baking sheet from the oven and let it rest for 2 minutes. Transfer the whole sheet pan to the table with a stack of plates and let everyone dig in.

Notes

Don’t overcook the beef; keep it moist so it clings to the chips. Layer strategically with two distinct layers for even distribution. Watch the oven carefully to avoid burning. Let people build their own plates with a toppings bar. Keep extra chips nearby for refills. Nachos don’t store well; store leftover beef and toppings separately.
