Easy Mummy Stuffed Peppers Recipe for a Spooky Halloween Dinner

These mummy stuffed peppers are a fun and delicious Halloween dinner that the whole family will love. Bell peppers are filled with a savory mixture of ground meat, rice, and spices, then topped with mozzarella cheese ‘bandages’ and olive ‘eyes’ for a spooky presentation.

  • 4 large bell peppers (any color, orange and yellow are festive)
  • 1 lb ground beef or turkey (80/20 blend recommended)
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 cup chicken or vegetable broth
  • 810 slices mozzarella cheese
  • 1216 black olives, sliced

Instructions

  1. Preheat oven to 375°F (190°C). Bring a large pot of water to a boil.
  2. Cut tops off bell peppers (about 1/2 inch from top). Remove seeds and membranes. Rinse under cold water.
  3. Par-cook peppers in boiling water for 3-4 minutes. Drain upside down on paper towels.
  4. Heat a large skillet over medium-high heat. Cook ground beef or turkey, breaking apart, until browned (5-6 minutes). Drain excess fat, leaving about 1 tablespoon.
  5. Add diced onion and minced garlic. Cook 2-3 minutes until onion is translucent.
  6. Season with salt, black pepper, dried oregano, and smoked paprika. Cook 1 minute.
  7. Remove from heat. Stir in cooked rice and chicken broth until well combined. Adjust seasoning if needed.
  8. Stand par-cooked peppers upright in a 9×13 baking dish. Spoon filling evenly into each pepper, leaving about 1/4 inch space at top.
  9. Cover dish with aluminum foil and bake for 20 minutes.
  10. After 20 minutes, remove foil. Cut each mozzarella slice into 2-3 strips (about 1/2 inch wide). Drape strips over peppers in a crisscross pattern, leaving a small gap in center for eyes. Place two olive slices in the gap.
  11. Return dish to oven, uncovered, and bake for 10-12 minutes until cheese is melted, bubbly, and just starting to turn golden at edges.
  12. Let peppers rest in dish for 5 minutes before serving.

Notes

Don’t skip par-cooking the peppers—it ensures they are tender. Use room temperature cheese for easier draping. Pat olive slices dry to prevent soggy cheese. For best results, let peppers rest 5 minutes before serving. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
