  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup (240g) canned pumpkin puree
  • 2 medium ripe bananas, mashed (about 1 cup or 240g)
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup (175g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Line the bottom with parchment paper, letting it hang over the long sides for handles.
  2. Mash the bananas in your large mixing bowl using a fork or potato masher. Leave some small chunks for texture. You want about 1 cup of mashed banana.
  3. Add the pumpkin puree, eggs, oil, vanilla, and both sugars. Stir together with a wooden spoon or rubber spatula until combined. The batter should be smooth and slightly thick.
  4. Add the flour, baking soda, pumpkin pie spice, and salt directly on top of the wet ingredients. Stir just until the flour disappears. A few small streaks of flour are okay. Do not over-mix.
  5. Fold in the chocolate chips, reserving a handful to sprinkle on top if desired. Use gentle strokes to distribute them evenly.
  6. Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle reserved chocolate chips on top. Tap the pan on the counter a few times to release air bubbles.
  7. Bake for 50-60 minutes. Start checking at 50 minutes. Insert a toothpick into the center; if it comes out clean or with a few moist crumbs, it is done. If the top is browning too quickly, tent loosely with aluminum foil after 40 minutes.
  8. Cool in the pan for 10 minutes, then lift the bread out using the parchment paper handles. Transfer to a cooling rack and let cool completely before slicing.

Do not over-mix the batter to avoid tough bread. Use room temperature ingredients for best results. Check baking soda freshness by testing with vinegar. Let the bread cool completely before slicing to prevent crumbling. For accuracy, use a kitchen scale to measure flour.
