  • 1 cup (240ml) milk
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup
  • 3 tablespoons melted coconut oil or butter
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/3 cup chocolate chips, chopped pecans, walnuts, or dried cranberries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or line with paper liners.
  2. In a large bowl, combine 2 cups rolled oats, 1 teaspoon baking powder, 2 teaspoons pumpkin pie spice, and 1/4 teaspoon salt. Stir until spices are evenly distributed.
  3. In a medium bowl, whisk together 1 cup pumpkin puree, 1 cup milk, 2 large eggs, 1/3 cup maple syrup, 3 tablespoons melted coconut oil (or butter), and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Fold gently with a spatula until just combined. Do not overmix.
  5. If using mix-ins, fold in 1/3 cup of your choice now.
  6. Let the batter rest for 5 minutes to allow oats to absorb liquid.
  7. Scoop the batter into the prepared muffin tin using a 1/4-cup scoop, filling each cup almost to the top. Gently press down to even the surface.
  8. Bake for 18-22 minutes, until tops are golden brown and a toothpick inserted into the center comes out clean.
