These Easy Sheet Pan Sausage and Pepper Tailgate Sliders are the ultimate game day food. Juicy Italian sausage, sweet caramelized peppers and onions, and melty provolone cheese are all roasted together on one pan for a crowd-pleasing meal ready in 30 minutes.

  • 2 pounds Italian sausage links (mix of sweet and hot)
  • 3 bell peppers (mix of colors), sliced into 1/2-inch strips
  • 1 large yellow onion, sliced into 1/4-inch half-rings
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon red pepper flakes (optional)
  • 12 slider rolls (Hawaiian sweet rolls or potato rolls)
  • 8 slices provolone cheese
  • 2 tablespoons butter, melted
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in the middle of the oven.
  2. Line a large sheet pan with aluminum foil or parchment paper. If using foil, spray with non-stick cooking spray.
  3. In a large mixing bowl, combine sliced peppers, onions, minced garlic, olive oil, oregano, salt, black pepper, and red pepper flakes (if using). Toss until well coated.
  4. Spread the seasoned peppers and onions in an even layer on the prepared sheet pan. Nestle the sausage links on top, spacing them evenly.
  5. Roast for 20 minutes. Halfway through (at 10 minutes), use tongs to turn the sausages for even browning.
  6. Check for doneness: sausages should be browned and cooked through (internal temperature 160°F/71°C for pork), peppers tender and caramelized at edges.
  7. Remove pan from oven. Lay provolone slices over the sausages. If desired, return to oven for 2 minutes for extra melty cheese.
  8. Slice slider rolls in half horizontally. Place them cut-side down on the pan around the sausages, nestling into the juices. Let sit for about 3 minutes to absorb flavor.
  9. Optional: For crunchier rolls, turn oven to broil and place pan on top rack for 1-2 minutes, watching carefully to avoid burning.
  10. Assemble sliders: Using tongs, place a sausage link with melted cheese on the bottom half of each roll. Top with roasted peppers and onions. Place top half of roll on each slider.
  11. Brush tops of rolls with melted butter. Sprinkle sesame seeds on top if using.
  12. Serve immediately while warm.

Notes

Don’t overcrowd the pan to ensure proper caramelization. Let sausages rest 5 minutes before slicing if desired. Use room temperature rolls for even toasting. Peppers and onions can be roasted up to 2 days ahead. Italian sausages are already seasoned, so go easy on added salt. For gluten-free, use certified gluten-free rolls and check sausage labels. For dairy-free, skip cheese or use plant-based alternative.
