  • 1 can (15 oz) diced tomatoes with green chiles (undrained)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth or chicken broth
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, sliced jalapeños, lime wedges

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it apart, until no longer pink (6-8 minutes). Drain excess fat if desired.
  2. Transfer the browned beef to a 4-6 quart slow cooker using a slotted spoon.
  3. Sprinkle taco seasoning and ranch dressing mix over the beef and stir to coat.
  4. Add undrained diced tomatoes with green chiles, drained black beans, and drained corn to the slow cooker.
  5. Pour in 2 cups of broth. Stir everything together until well combined.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
