  • 1.5 pounds boneless, skinless chicken breasts (about 23 large)
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or plain Greek yogurt
  • Juice of 1 lime
  • For serving (optional): shredded Monterey Jack cheese, fresh cilantro, diced avocado, tortilla chips, sliced jalapeños

Instructions

  1. Prep the ingredients: Dice the onion and mince the garlic. Drain and rinse the cannellini beans. Open the can of green chiles. Measure out the cumin, oregano, salt, and pepper into a small bowl.
  2. Layer the slow cooker: Place the chicken breasts in the bottom of the slow cooker. Sprinkle the diced onion and minced garlic over the top. Add the drained beans and green chiles. Sprinkle the spice mixture evenly over everything. Pour in the chicken broth. Do not stir.
  3. Cook low and slow: Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until the chicken is tender and shreds easily.
  4. Shred the chicken: Carefully remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
  5. Create the creamy base: Scoop out about 1 cup of the beans and a little cooking liquid. Mash them into a rough paste using an immersion blender or fork. Stir the paste back into the slow cooker.
  6. Finish the chili: Stir in the sour cream (or Greek yogurt) and lime juice. Taste and adjust seasoning with more salt, cumin, or lime juice as needed.
  7. Keep warm until serving: Switch the slow cooker to the ‘Warm’ setting. Serve hot with desired toppings.

Notes

For a thicker chili, mash more beans or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes. Toasting the cumin and oregano in a dry skillet for 30 seconds before adding enhances flavor. This chili tastes even better the next day.
