  • 1 large kiwi, peeled and sliced (optional)
  • 2 tablespoons apricot jam (warmed and strained, optional)
  • 1 tablespoon water (to thin glaze, optional)

Instructions

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate large bowl, beat softened butter with granulated sugar until light and fluffy, about 3 minutes.
  3. Add egg and vanilla extract to butter mixture and mix until combined.
  4. Gradually add dry ingredients to wet ingredients, mixing just until dough forms.
  5. Wrap dough in plastic and chill for 30 minutes.
  6. Preheat oven to 350°F (177°C). Line baking sheet with parchment paper or silicone mat.
  7. Roll dough on lightly floured surface to about ¼-inch (6 mm) thickness.
  8. Use a large star-shaped cookie cutter or sharp knife to cut out star shape and transfer to baking sheet.

  10. Beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon zest; mix until creamy. Optionally add heavy cream or milk for lighter texture.
  11. Spread cream cheese mixture evenly over cooled crust, leaving a small border around edges.
  12. Arrange sliced strawberries, blueberries, raspberries, and kiwi in a patriotic pattern on top.
  13. Optional: Warm apricot jam with water until smooth and lightly glaze fruit with a pastry brush.
  14. Refrigerate assembled pizza for at least 30 minutes before serving.
