  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Fresh basil or parsley, chopped for garnish

Instructions

  1. Pat 4 boneless, skinless chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet until shimmering but not smoking, about 3 minutes.
  3. Place chicken breasts in the hot pan and cook undisturbed for 5-6 minutes until golden brown. Flip and cook the other side for another 5 minutes until cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tent loosely with foil.
  4. Lower heat to medium and add 2 tablespoons butter to the same pan. Once melted, stir in minced garlic and sauté for about 30 seconds until fragrant, avoiding browning.
  5. Add chopped sun-dried tomatoes and cook for 1 minute, stirring to combine flavors.
  6. Pour in 1 cup chicken broth, scraping up browned bits from the pan bottom. Let simmer for 2-3 minutes to reduce slightly.
  7. Stir in 1 cup heavy cream, 1/2 cup freshly grated Parmesan cheese, 1 teaspoon Italian seasoning, and a pinch of red pepper flakes. Simmer gently for 5 minutes, stirring occasionally, until sauce thickens and coats the back of a spoon. Watch heat carefully to prevent cream separation.
  8. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over chicken and warm together for 2 minutes to meld flavors.
  9. Garnish with chopped fresh basil or parsley before serving.
