  • 4 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Reduce the Apple Cider: Pour the 1 cup of apple cider into a small saucepan. Bring it to a simmer over medium heat. Let it cook, stirring occasionally, until it reduces to about 1/4 cup. This will take about 10-12 minutes. Remove it from the heat and let it cool for a few minutes.
  2. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease your donut pan with non-stick spray or melted butter.
  3. Mix Dry Ingredients: In a large bowl, whisk together the 2 cups of all-purpose flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon salt.
  4. Combine Wet Ingredients: In a separate medium bowl, whisk together the 1 large egg, 1/2 cup buttermilk, 3 tablespoons melted butter, 1 teaspoon vanilla extract, and the cooled reduced apple cider.
  5. Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Use a rubber spatula to fold everything together gently until just combined. Do not overmix.
  6. Fill the Pan: Transfer the batter to a piping bag or a ziploc bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.
