  • Juice of 1 fresh lime (about 2 tablespoons or 30 ml)
  • 1 teaspoon honey or agave syrup (optional)
  • ½ teaspoon salt, or to taste
  • Pinch of freshly ground black pepper (optional)

Instructions

  1. Peel and dice the peaches into roughly ½-inch cubes (about 150 grams).
  2. Slice the jalapeños lengthwise, remove seeds if less heat is desired, then finely chop.
  3. Peel and finely dice half a small red onion (about 50 grams).
  4. Rinse, pat dry, and chop about ¼ cup loosely packed fresh cilantro.
  5. Combine peaches, jalapeños, onion, and cilantro in a mixing bowl.
  6. Add lime juice, salt, and black pepper; stir gently to blend without bruising the fruit.
  7. If desired, stir in 1 teaspoon honey or agave syrup to enhance sweetness.
  8. Cover and refrigerate for at least 30 minutes to let flavors meld.
  9. Before serving, stir and adjust seasoning with salt, lime juice, or jalapeño to taste.
