This healthy blueberry baked oatmeal is an easy overnight breakfast that requires just 10 minutes of prep the night before. The oats soak up the liquid overnight and bake into a creamy, custard-like dish with burst blueberries, making it a perfect make-ahead meal for busy mornings.

Ingredients

Scale
  • 2 cups (180g) rolled oats
  • 1½ cups (about 200g) fresh or frozen blueberries
  • 1½ cups (360ml) milk of choice (whole milk, oat milk, or almond milk)
  • ⅓ cup (80ml) pure maple syrup
  • 1 large egg
  • 2 tablespoons (28g) unsalted butter or coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Optional toppings: chopped pecans or walnuts, extra maple syrup, Greek yogurt

Instructions

  1. Grease an 8×8-inch baking dish with butter or cooking spray.
  2. In a mixing bowl, combine 2 cups rolled oats, 1 teaspoon baking powder, 1 teaspoon cinnamon, and ¼ teaspoon salt. Stir with a whisk.
  3. In a separate bowl or measuring cup, whisk together 1½ cups milk, ⅓ cup maple syrup, 1 large egg, 2 tablespoons melted butter or coconut oil, and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Fold in 1½ cups blueberries gently, reserving a handful for topping.
  5. Pour the mixture into the greased baking dish. Spread evenly and sprinkle reserved blueberries on top. Cover tightly with plastic wrap or a lid.
  6. Refrigerate overnight (at least 6 hours, up to 24 hours).
  7. In the morning, remove the dish from the fridge and let it sit on the counter for 10 minutes while the oven preheats to 375°F (190°C).
  8. Remove plastic wrap and bake for 35-40 minutes, until the top is golden brown and the edges are set. The center should be slightly jiggly but not liquid.
  9. Remove from the oven and let cool on a wire rack for 5-10 minutes.
  10. Serve warm with desired toppings (e.g., maple syrup, milk, Greek yogurt, nuts).

Notes

Don’t skip the overnight soak for the best texture. Use room temperature ingredients for the wet mix to prevent butter from solidifying. Check baking time early as ovens vary. Let the oatmeal cool before cutting for clean squares. Double the recipe for a 9×13 dish and increase baking time by 10-15 minutes.
