Ingredients

Scale
  • 1/2 cup unsalted butter (1 stick), softened
  • 1 cup Medjool dates, pitted and soaked in warm water for 10 minutes
  • 1/4 cup honey
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract (pure vanilla)
  • 1 1/2 cups almond flour (blanched)
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon turmeric powder (for orange layer)
  • 1/8 teaspoon turmeric powder (for yellow layer)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. Make the date paste: Drain the soaked Medjool dates and add them to a food processor with 2 tablespoons of warm water. Blend until completely smooth, about 2 minutes, scraping down the sides as needed.
  3. Cream the butter and date paste: In a large mixing bowl, beat the softened butter with the date paste and honey until light and fluffy, about 3 minutes with an electric mixer.
  4. Add the egg and vanilla: Beat in the egg and vanilla extract until fully incorporated. Scrape the bowl well.
  5. Mix the dry ingredients: In a separate bowl, whisk together the almond flour, coconut flour, baking soda, and salt. Add to the wet mixture and stir until just combined. Do not overmix.
  6. Divide the dough into three equal portions (about 1 cup each). Leave one portion plain (white layer). To one portion, add 1/4 teaspoon turmeric and mix well until evenly orange. To the remaining portion, add 1/8 teaspoon turmeric and mix until pale yellow.
  7. Layer the dough: Press the white dough evenly into the bottom of the prepared pan. Next, press the yellow dough evenly over the white layer. Finally, press the orange dough on top. Layers should be about 1/2 inch each.
  8. Bake for 18-22 minutes. The edges should be lightly golden and the center should look set but still soft. A toothpick inserted in the center should come out with a few moist crumbs.
  9. Cool completely: Let the bars cool in the pan for 10 minutes, then lift them out using the parchment paper handles and transfer to a cooling rack. Cool completely before cutting, about 1 hour.
  10. Cut and serve: Once completely cool, use a sharp knife to cut into 16 squares. For cleaner cuts, wipe the knife between each slice.

Notes

Don’t skip the parchment paper—it prevents sticking. Wet your fingers when pressing dough into layers to prevent sticking. Check for doneness at 18 minutes as ovens vary. Use a sharp knife for clean cuts. Room temperature ingredients matter—set everything out 30 minutes before starting. The bars actually taste better on day two as the date sweetness mellows.
