  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano (Mexican oregano if available)
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper
  • 1/2 cup (120 ml) low-sodium chicken or vegetable broth
  • 1 can (14.5 oz / 411 g) fire-roasted diced tomatoes, drained
  • 1 tbsp tomato paste (optional, for deeper flavor)
  • Juice of 1/2 lime
  • 2 cups cooked white or brown rice (or cauliflower rice for low-carb)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen and thawed, or canned and drained)
  • 1 large avocado, sliced or cubed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crumbled queso fresco or shredded cheddar (optional)
  • 1/4 cup sour cream or Greek yogurt
  • Lime wedges, for serving

Instructions

  1. Prep your ingredients (5 minutes): Dice the onion, mince the garlic, drain and rinse the beans and corn, halve the cherry tomatoes, chop the cilantro, and slice the avocado. If cooking rice from scratch, start it now.
  2. Mix the spice blend (1 minute): In a small bowl, combine chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper.
  3. Cook the aromatics (3 minutes): Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft and translucent, about 3 minutes. Add minced garlic and cook for 30 seconds more until fragrant.
  4. Toast the spices (1 minute): Add the spice mixture to the skillet and stir constantly for 30-60 seconds until fragrant and slightly darkened.
  5. Brown the turkey (5-7 minutes): Add ground turkey to the skillet. Break into small crumbles with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes, letting it get some golden-brown bits.
  6. Add the liquids (5 minutes): Stir in drained fire-roasted tomatoes, tomato paste (if using), and chicken broth. Bring to a gentle simmer, then reduce heat to medium-low. Cook for about 5 minutes, stirring occasionally, until liquid has mostly evaporated and mixture is thick and saucy.
  7. Finish with lime (1 minute): Remove skillet from heat. Squeeze juice of half a lime over the turkey mixture and stir. Taste and adjust seasoning as needed.
  8. Assemble the bowls (3 minutes): Divide cooked rice among four bowls. Top each with turkey taco meat, black beans, corn, avocado slices, cherry tomatoes, and cilantro. Finish with sour cream or Greek yogurt, cheese, and a lime wedge.

Notes

Toast spices in oil for deeper flavor. Let turkey get some color for better texture. Store components separately for meal prep. Turkey meat tastes even better the next day. For low-carb, use cauliflower rice or lettuce. For vegetarian, replace turkey with black beans or tofu.
