These healthy peanut butter banana overnight oats are a quick and easy lunchbox idea that takes just 5 minutes to prep. Made with simple ingredients like rolled oats, peanut butter, and ripe bananas, they’re a wholesome, filling breakfast or snack that kids love.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (any kind)
  • 2 tablespoons (32g) natural peanut butter
  • 1 medium banana (about 100g), mashed
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) maple syrup or honey (optional)
  • A pinch of salt
  • 1/2 teaspoon (2.5ml) vanilla extract

Instructions

  1. In a small bowl, mash the banana with a fork until smooth with a few small lumps.
  2. In a jar or container, combine the mashed banana, milk, peanut butter, vanilla extract, and maple syrup (if using). Whisk or stir until the peanut butter is fully incorporated.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir well to combine, ensuring all oats are submerged in the liquid.
  4. Seal the jar and refrigerate for at least 4 hours, preferably overnight.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, or granola. Serve cold or at room temperature.

Notes

For best results, use ripe spotty bananas for natural sweetness. Stir the oats halfway through chilling to ensure even absorption. Toppings should be added just before serving to avoid sogginess. Store in the fridge for up to 4 days or freeze for up to 1 month.
