Healthy Pumpkin Greek Yogurt Muffins: Easy No-Sugar Recipe

These healthy pumpkin muffins with Greek yogurt are tender, perfectly spiced, and naturally sweetened with maple syrup. No refined sugar, no fuss, and absolutely delicious.

  • 1 ½ cups (180g) whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup (245g) canned pumpkin puree
  • ½ cup (120ml) maple syrup
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) plain Greek yogurt
  • ¼ cup (60ml) coconut oil, melted
  • 1 teaspoon vanilla extract
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • ¼ cup (40g) dark chocolate chips (optional)
  • 2 tablespoons pepitas (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In a separate medium bowl, whisk together the pumpkin puree, maple syrup, eggs, Greek yogurt, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
  5. If using, gently fold in walnuts, chocolate chips, or pepitas.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Room temperature ingredients blend better. Do not overmix the batter. For bakery-style domed tops, fill cups almost to the rim. Muffins taste even better the next day.
