A quick and easy fall-inspired iced coffee with a light, airy pumpkin spice cold foam. Made with simple ingredients, this recipe delivers authentic pumpkin flavor in every sip without any fuss.

  • 1 cup cold brew coffee or strong iced coffee
  • 1/4 cup milk (for the coffee)
  • 2 tablespoons pumpkin puree (100% pure, not pie filling)
  • 1/4 cup heavy cream or heavy whipping cream
  • 2 tablespoons milk (for the foam)
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice (plus extra for garnish)
  • Ice cubes

Instructions

  1. Fill a 12-ounce glass halfway with ice cubes and set aside.
  2. In a small blender cup or bowl, combine 1/4 cup heavy cream, 2 tablespoons milk, 2 tablespoons pumpkin puree, 1 tablespoon powdered sugar, 1/2 teaspoon vanilla extract, and 1/2 teaspoon pumpkin pie spice. Ensure the pumpkin puree is smooth.
  3. Blend on high speed for 30 to 45 seconds until thick and pourable, similar to melted soft serve. The foam should hold a soft peak.
  4. Pour 1 cup of cold brew or strong iced coffee over the ice. Add 1/4 cup of milk and stir gently to combine.
  5. Using a spoon, gently scoop the cold foam on top of the iced coffee. Do not pour it—scooping keeps the layers distinct.
  6. Sprinkle a pinch of pumpkin pie spice over the top. Insert a straw and serve immediately.

Notes

Keep all ingredients cold for best foam. Do not over-blend or the foam may turn into butter. For dairy-free, use full-fat coconut cream and oat milk. The foam is best within 5 minutes of blending. To make without a blender, shake ingredients in a mason jar for 60 seconds.
