Instructions

  1. Prepare the Garlic Herb Butter: In a medium bowl, melt 4 tablespoons (about 56 g) of unsalted butter. Stir in 4 minced garlic cloves, 2 tablespoons chopped fresh parsley, and 2 tablespoons chopped fresh thyme. Add 1 tablespoon fresh lemon juice, a pinch of salt, and black pepper to taste. Mix well and let sit while prepping chicken.
  2. Pat dry the 4 boneless, skinless chicken breasts with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
  3. Place the chicken breasts in a single layer in the slow cooker. Pour the melted garlic herb butter evenly over the chicken, coating each piece.
  4. Pour 1/2 cup (120 ml) low-sodium chicken broth around the breasts, not directly on top.
  5. Cover and cook on LOW for 3 to 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C). Avoid lifting the lid frequently.
