These kid-approved delicata squash rings are roasted to caramelized perfection and drizzled with a creamy maple tahini sauce. A quick, easy, and healthy side dish that even picky eaters will love.

  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 cup tahini

  • 2 tablespoons warm water (plus more as needed)
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash well. Cut off both ends, then slice crosswise into 1/2-inch thick rings. Scoop out the seeds and stringy pulp from the center of each ring.
  3. Place the squash rings in a large bowl. Drizzle with olive oil, then sprinkle with salt, black pepper, and garlic powder (if using). Toss gently to coat evenly.
  4. Arrange the seasoned rings in a single layer on the prepared baking sheet, giving them space to roast.
  5. Roast for 15 minutes, then flip each ring over. Roast for another 10-15 minutes, until tender and golden brown around the edges.
  6. While the squash roasts, make the maple tahini drizzle: In a small bowl, combine tahini, maple syrup, warm water, lemon juice, and a pinch of salt. Whisk until smooth. Add more warm water if needed to reach a pourable consistency.
  7. Transfer the roasted squash rings to a serving platter. Drizzle generously with the maple tahini sauce. Garnish with toasted sesame seeds, fresh parsley, and flaky sea salt if desired. Serve immediately.

Notes

For extra crispy rings, ensure the oven is fully preheated and do not overcrowd the baking sheet. Pat the squash dry after washing to prevent steaming. The drizzle can be made ahead and stored in the fridge for up to a week; thin with warm water before serving. Leftover rings can be reheated in a 350°F oven for 5-7 minutes or in an air fryer.
