Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce (recommend Frank’s RedHot)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup ranch dressing (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 24 wonton wrappers
  • 2 tablespoons melted butter
  • 1/4 cup additional shredded cheddar cheese for topping
  • Chopped green onions for garnish (optional)
  • Extra ranch or blue cheese dressing for dipping (optional)
  • Celery sticks on the side (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly brush each wonton wrapper with melted butter on both sides. Press one wrapper into each cup of a mini muffin tin, gently pushing it down to form a cup shape.
  3. Bake the empty cups for 5 minutes until edges just start to turn golden.
  4. In a medium mixing bowl, combine softened cream cheese, shredded chicken, buffalo sauce, cheddar cheese, mozzarella cheese, ranch dressing (if using), garlic powder, and onion powder. Mix until well combined. Season with salt and pepper to taste.
  5. Use a small cookie scoop or spoon to divide the filling evenly among the 24 cups, about 1 to 1.5 tablespoons per cup.
  6. Sprinkle a pinch of shredded cheddar cheese over each cup.
  7. Bake for 10 to 12 minutes until filling is hot and bubbly and cheese is melted and lightly browned.
  8. Cool for 5 minutes in the pan before removing.
  9. Garnish with chopped green onions if desired. Serve warm with extra ranch or blue cheese dressing for dipping and celery sticks on the side.

Notes

Pre-baking the empty wonton cups for 5 minutes is crucial to prevent sogginess. Keep wonton wrappers covered with a damp paper towel to prevent drying out. Use room temperature cream cheese for smooth blending. Shred your own cheese for best melting. Can be assembled up to 4 hours ahead and refrigerated before baking. For freezing, assemble completely, freeze on baking sheet, then transfer to freezer bag; bake from frozen at 375°F for 15-18 minutes.
