  • 3 tablespoons (38g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ½ cup + 1 tablespoon (75g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts. Let it cool for 2 minutes.
  3. Add the granulated sugar and brown sugar to the melted butter. Whisk vigorously for about 30 seconds until smooth and slightly thickened.
  4. Add the egg yolk and vanilla extract. Whisk until fully combined and glossy.
  5. In a small bowl, whisk together the flour, baking soda, and salt.
  6. Add the flour mixture to the wet ingredients. Fold gently with a rubber spatula until just combined. Do not overmix.
  7. Fold in the chocolate chips. The dough will be soft and slightly sticky.
  8. Using a 1.5-tablespoon cookie scoop, portion the dough into 6 equal balls. Place them 2 inches apart on the prepared baking sheet.
  9. Bake immediately for 9 to 11 minutes. The edges should be golden and the centers slightly underdone and puffy.
  10. Let the cookies rest on the hot baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

If cookies spread too much, the butter may have been too warm; let it cool 3 minutes next time. If they don’t spread enough, flour may be packed too tightly; spoon and level. For best results, use a kitchen scale. Underbake slightly for soft cookies. Let cookies rest on the pan for 5 minutes after baking.
