A lighter, healthier twist on a classic mimosa float, combining tart apple cider, bubbly prosecco, and creamy frozen Greek yogurt for a cozy fall drink that comes together in just 5 minutes.

  • 4 oz (120 ml) apple cider (no added sugar)
  • 2 oz (60 ml) prosecco or dry sparkling wine
  • 1 oz (30 ml) chilled sparkling water
  • 2 scoops frozen vanilla Greek yogurt
  • 1 tablespoon apple cider reduction (optional)
  • 2 tablespoons cinnamon sugar (1 tbsp cinnamon + 1 tbsp sugar)
  • 1 lemon wedge
  • 1 cinnamon stick
  • 1 thin apple slice (Honeycrisp or Fuji)

Instructions

  1. Prepare the cinnamon sugar rim: Mix cinnamon and sugar on a small plate. Run lemon wedge around the rim of a glass, then dip into the mixture to coat evenly. Tap off excess.
  2. Make the apple cider reduction (optional): Simmer 1/2 cup apple cider in a small saucepan over medium heat, then reduce to low and let bubble for 8-10 minutes until syrupy. Cool for 2 minutes.
  3. Assemble the float: Drop one scoop of frozen Greek yogurt into the prepared glass. Drizzle with 1 tablespoon apple cider reduction if using.
  4. Pour the liquids: Slowly pour apple cider over the yogurt, then sparkling water, then prosecco last, pouring gently down the side to preserve bubbles.
  5. Garnish and serve: Slide apple slice onto the rim, add cinnamon stick for stirring. Serve immediately.

Notes

Chill all ingredients and glass beforehand for best bubbles. Don’t stir the drink; let the yogurt melt naturally. For non-alcoholic version, use sparkling apple cider instead of prosecco.
