Instructions

  1. Brown the Sausage: Place a large Dutch oven over medium-high heat. Use a slotted spoon to transfer the sausage to a plate, leaving about 2 tablespoons of rendered fat in the pot. If your sausage is lean, add a drizzle of olive oil.
  2. Sauté the Aromatics: Reduce heat to medium. Add the diced onion to the pot and cook, stirring occasionally, until softened and translucent, about 4-5 minutes. Scrape up any browned bits from the bottom of the pot. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Build the Tomato Base: Stir in the tomato paste and cook for 1-2 minutes, stirring constantly. Add the crushed tomatoes, chicken broth, dried oregano, dried basil, red pepper flakes (if using), and a generous pinch of salt and black pepper. Stir to combine, scraping the bottom of the pot well.

  6. Assemble and Broil (Optional but Recommended): Preheat your broiler to high. Ladle the soup into oven-safe bowls.
