Ingredients

Scale
  • 1 cup whole milk
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons granulated sugar
  • 1 packet (about 2.5 teaspoons) unflavored gelatin
  • 1/4 cup cold water
  • 1/4 cup vodka or your choice of spirit
  • 1 cup water
  • 1 packet (about 2.5 teaspoons) unflavored gelatin
  • 1/4 cup granulated sugar
  • 1/2 teaspoon peppermint extract
  • Red food coloring
  • 1/4 cup vodka or peppermint schnapps
  • Whipped cream (for garnish)
  • Crushed candy canes or peppermint candies (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Bloom the gelatin: In a small bowl, sprinkle 1 packet of unflavored gelatin over 1/4 cup of cold water. Let it sit for about 5 minutes until spongy. Repeat for the peppermint layer in a separate bowl.
  2. Make the chocolate base: In a small saucepan over medium heat, warm 1 cup of whole milk until steaming but not boiling. Reduce heat to low, add 1/2 cup chocolate chips and 2 tablespoons sugar. Stir constantly until melted and smooth, about 2-3 minutes. Remove from heat.
  3. Incorporate the gelatin and spirit: Add the bloomed gelatin to the warm chocolate mixture and whisk until completely dissolved. Stir in 1/4 cup vodka. Pour evenly into shot cups, filling halfway. Refrigerate for at least 2 hours until firm.
  4. Prepare the peppermint layer: In another small saucepan, bring 1 cup water to a boil. Remove from heat, stir in 1/4 cup sugar until dissolved. Let cool for 5 minutes. Add the second batch of bloomed gelatin and whisk until smooth. Stir in 1/2 teaspoon peppermint extract and a few drops red food coloring. Mix in 1/4 cup vodka or peppermint schnapps. Let cool to room temperature.
  5. Layer the peppermint: Once chocolate layer is firm and peppermint mixture is cool, carefully pour peppermint mixture over chocolate using a spoon or pipette. Fill each cup to the top. Refrigerate for at least 4 hours, preferably overnight.
  6. Garnish and serve: Just before serving, add a dollop of whipped cream to each shot. Sprinkle with crushed candy canes and chocolate shavings. Serve chilled.

Notes

Temperature is key: avoid adding gelatin to boiling liquid. Ensure chocolate layer is fully set before adding peppermint layer. For best results, let set overnight. Start with less peppermint extract and adjust to taste.
