  • 6 oz cheese cubes (cheddar, gouda, pepper jack)
  • 1 cup assorted olives (black, green, kalamata)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pickles or cornichons
  • 1 cup grapes (red or green)
  • 1/2 cup dried apricots or figs
  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1 cup crackers (water crackers, wheat thins, or baguette slices)
  • Fresh rosemary sprigs (optional, for decoration)

Instructions

  1. Make the Skull Cheese: In a mixing bowl, combine softened cream cheese, shredded cheddar, mozzarella, and milk. Mix until completely smooth. Spray a skull-shaped silicone mold with non-stick cooking spray. Pack the cheese mixture firmly into the mold, pressing down to eliminate air pockets. Smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.
  2. Unmold the Skull: Remove the mold from the refrigerator. Gently peel back the silicone from the edges. Place your serving board upside down on top of the mold, then flip everything over together. The skull should release easily. If it sticks, run the mold under warm water for 10 seconds and try again. Place the skull in the center of your board.
  3. Arrange the Meats: Fold salami slices in half, then fold again to create small triangles. Arrange them in a fan pattern around one side of the skull. Roll prosciutto slices into loose cylinders and place them near the salami. Layer some slices over each other for texture.
  4. Add the Cheeses: Cube cheese blocks into bite-sized pieces, about 1-inch squares. Arrange them in small clusters around the board, alternating colors. Place gouda near the prosciutto, cheddar near the salami, and pepper jack on the opposite side.
  5. Fill in with Fruits and Vegetables: Scatter grapes in small bunches. Place cherry tomatoes cut-side up. Tuck olives and pickles into empty spaces. Arrange dried apricots near the cheese cubes. Fill every inch of the board.
  6. Add Crunchy Elements: Pour mixed nuts into small bowls or directly onto the board in small piles. Arrange crackers in a fan pattern or stack them neatly. Leave some crackers loose for easy grabbing.
  7. Final Touches: Tuck fresh rosemary sprigs around the skull to look like creepy vines or hair. Add edible flowers, dried orange slices, or small Halloween-themed decorations if desired. Fill any obvious gaps with extra crackers or nuts.

Notes

Don’t skip the chilling step for the skull cheese; it helps hold its shape. Drain olives and pickles well to avoid sogginess. Assemble the skull the night before for best results. For a vegetarian version, skip the cured meats and add marinated artichoke hearts, roasted red peppers, and extra cheese varieties.
