A simple, comforting shrimp pasta dish ready in under 15 minutes, featuring buttery, garlicky shrimp and tender pasta strands perfect for busy weeknights.

  • 1 pound medium-sized peeled and deveined shrimp (wild-caught if possible)
  • 8 ounces spaghetti or linguine (gluten-free pasta optional)
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 8 ounces of pasta and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking. Drain pasta, reserving 1/2 cup of pasta water.
  2. While pasta cooks, heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium-high heat. When butter foams, add shrimp in a single layer. Cook without stirring for 1-2 minutes until shrimp start to turn pink on one side.
  3. Flip shrimp and add minced garlic and red pepper flakes if using. Stir frequently for about 2 minutes until shrimp are opaque and garlic is fragrant but not browned. Lower heat if garlic browns too fast.
  4. Stir in remaining 2 tablespoons butter and lemon juice. Toss shrimp to coat evenly in the buttery sauce.
  5. Add cooked pasta to the skillet with shrimp. Toss gently, adding reserved pasta water a few tablespoons at a time to loosen sauce if needed. Season with salt and black pepper to taste.
  6. Remove from heat, sprinkle chopped parsley over the top, toss once more, and serve immediately while warm.

Notes

If the sauce is too thick, add more reserved pasta water to loosen it. Avoid overcooking shrimp to prevent rubbery texture. For dairy-free, substitute butter with olive oil and vegan butter. Optional additions include white wine, cherry tomatoes, or fresh basil for variation.
