Ingredients

Scale
  • 1/2 cup water
  • 1/2 cup brown sugar, packed
  • 2 tablespoons molasses (unsulphured)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 4 cups whole milk (or any milk of choice)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons gingerbread syrup (adjust to taste)
  • Mini marshmallows (for topping)
  • Crushed candy canes or peppermint bits (for topping)
  • Whipped cream (for topping)
  • Caramel sauce (for topping)
  • Chocolate shavings or curls (for topping)
  • Gingerbread cookies or graham crackers (for dipping)
  • Cinnamon sticks (for stirring)
  • Extra gingerbread syrup (for serving)

Instructions

  1. Make the Gingerbread Syrup: In a small saucepan, combine water, brown sugar, molasses, ground ginger, cinnamon, cloves, nutmeg, and salt. Whisk until sugar starts to dissolve. Place over medium heat and bring to a gentle simmer. Let simmer for about 3 minutes, whisking occasionally, until syrup thickens slightly and becomes fragrant. Remove from heat and set aside.
  2. Bloom the Spices: While syrup is still warm, measure 2 tablespoons into a separate small bowl. Add a splash of hot milk (about 2 tablespoons) and whisk together. Let sit for 30 seconds to bloom the spices.
  3. Make the Hot Chocolate Base: Rinse the saucepan (or use a clean one) and add 4 cups of milk. Heat over medium heat until steaming with small bubbles around the edges (do not boil). In a small bowl, whisk together cocoa powder and the bloomed spice mixture to form a paste. Once milk is hot, whisk in the cocoa-spice paste until smooth. Add semi-sweet chocolate chips and vanilla extract, whisking until chocolate is fully melted and mixture is smooth and glossy (about 2-3 minutes). Taste and adjust …
  4. Set Up the Topping Bar: While hot chocolate heats, arrange toppings in small bowls or on a tray. Include marshmallows, crushed candy canes, whipped cream, caramel sauce, chocolate shavings, gingerbread cookies, cinnamon sticks, and extra gingerbread syrup.
  5. Assemble and Serve: Ladle hot chocolate into mugs. Let everyone add their own toppings. Serve immediately with a gingerbread cookie on the side for dipping if desired.

Notes

The gingerbread syrup can be made ahead and stored in an airtight jar in the refrigerator for up to 2 weeks. For a crowd, transfer finished hot chocolate to a slow cooker set to ‘warm’ to keep it ready for hours. If using skim milk, add a tablespoon of heavy cream or a pat of butter for richness. For a vegan version, use oat milk or full-fat coconut milk and dairy-free chocolate chips.
