These small batch chocolate chip cookies are everything you want when a craving hits—quick, easy, and made with simple ingredients. They come together in under 30 minutes and make exactly twelve cookies with crispy edges, soft centers, and melty chocolate in every bite.

Ingredients

Scale
  • 4 tablespoons (57g) unsalted butter, softened
  • ¼ cup (50g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ¾ cup (96g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips
  • ⅓ cup (60g) dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2 minutes with a hand mixer on medium speed.
  3. Add the egg yolk and vanilla extract. Beat until just combined, about 30 seconds. Scrape down the sides of the bowl.
  4. In a small bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed or folding with a spatula until no streaks of flour remain. Do not overmix.
  6. Fold in both types of chocolate chips until evenly distributed. The dough will be thick and slightly sticky.
  7. Using a cookie scoop or tablespoon, portion out 12 equal balls of dough. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, until the edges are golden brown and the centers look slightly underdone.
  9. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For taller cookies, chill the dough balls for 10 minutes before baking. If cookies come out flat, the butter was too soft or the baking soda is old. Measure flour correctly by fluffing, spooning, and leveling. The flavors deepen after a day or two.
