This easy one-bowl banana bread requires no mixer and comes together in about 10 minutes. It’s tender, moist, and perfect for cozy evenings or any day that needs a little comfort.

  • 3 ripe bananas, mashed (about 1 ½ cups / 360 ml)
  • ½ cup (113 g) unsalted butter, melted
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (60 g) chopped walnuts or pecans (optional)
  • ½ cup (85 g) chocolate chips (optional)
  • ¼ cup (40 g) dried cranberries or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray, or line it with parchment paper, leaving an overhang on two sides.
  2. Mash the bananas in your mixing bowl with a fork or potato masher until mostly smooth with a few small lumps. You should have about 1 ½ cups.
  3. Add the melted butter and stir until well combined. Let the butter cool slightly after melting so it doesn’t cook the eggs later.
  4. Add the sugar, eggs, and vanilla. Stir vigorously with a whisk or wooden spoon until smooth and glossy, about 30 seconds.
  5. Sprinkle the flour, baking soda, salt, and cinnamon evenly over the wet ingredients. Gently stir until just combined. Fold in any add-ins (nuts, chocolate chips, etc.) at this point.
  6. Pour the batter into the prepared pan and smooth the top. The batter will be thick.
  7. Bake for 50-60 minutes. At the 40-minute mark, check the bread; if the top is browning too quickly, tent it loosely with aluminum foil. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 10 minutes, then lift it out using the parchment overhang (or invert onto a cooling rack). Let it cool completely on the rack, about 1 hour, before slicing.

Notes

Don’t overmix the batter to avoid tough bread. Use room temperature eggs to prevent the melted butter from seizing. Check baking soda freshness by testing with vinegar. Let the bread cool completely before slicing to avoid a gummy texture. For even baking, rotate the pan halfway through.
